"The balm was great it was a light conditioner that didn't darken the leather that I applied it onto. It was easy to apply and a good amount in the bottle. One gripe that I could note is that the bottle is very skinny and tall which makes it slightly hard to reach into if I were to try to reach towards the bottom of the bottle."

Would Venetian Leather Balm be a good choice for bison leather? Particularly the Walnut Bison Field Boot?

Yes, you can use neutral on any color of leather.
Obviously the black cream is for black shoes, and the brown cream is for shoes that are darker brown. Do you have any advice on how to decide whether to use "natural" or "brown" on shoes that are a light or medium shade of brown or tan?
In most cases, natural is a safe choice. Especially when it is used primarily as a conditioner, applying minimal amounts to nourish the article. However, you will have to check whether the leather in question has a brown shoe cream or wax on the surface as white cream can possibly remove some of this finish. Therefor brown can be useful when some extra color or depth is desired.
